I would like to try with with chicken breasts like someone else did and take them out early. I love the how the thighs turned out and my hubby ate them but dark meat is not his favorite. It’s a great recipe. This chicken is truly delicious. I have made this recipe four or five times already it's definitely a keeper. It doesn't make much extra sauce so if you want some to scoop over potatoes or pasta you should double the sauce. Delicious and looked gorgeous served in a pineapple! I cut the sugar slightly and next time will try only putting in half the amount and possibly even omitting it altogether. But the recipe turned out great and the flavor and presentation was beautiful. I also sautéed onion with the red pepper. Can’t wait to make this again. I used chicken breast tenderloins that I cut into 1 inch cubes and omitted the sesame seeds, otherwise stuck with the recipe exactly. The chicken was tender, juicy and full of flavor! I personally made this tonight and I bought the jar of sundried tomatoes in the oil. Used 1/2 a cup and just drained the oil out of the measuring cup before I added. Turned out great. I will make this again. I added onion to the sauce, and I think that is a must. Don't be dumb like me. Drain most of the oil from the pan before you start making the sauce. Next time, I'll add a touch more cheese to thicken the sauce a bit more. Overall, very good. This recipe was perfect, comfort food at its finest! I used a leftover rotisserie chicken which added some extra flavor, and I'll likely go this route again to save a step.  I had to make some adjustments for what I had on hand, but the whole family really enjoyed this casserole. I used a powder brown gravy mix and made 3 cups of gravy instead of using the chicken broth, flour and seasonings. I also used a 12 oz. package of peas and carrots. Will definitely make again. This recipe was fantastic! I used 2 percent milk instead of the cream and honey instead of the sugar. It came out perfectly. Will definitely make again. This chicken dish is delicious. I wanted more sauce so I doubled the stock. I also added 2 TBS of flour the the onion mixture after I added the balsamic vinegar because I like a thicker sauce. The flavor is amazing. I literally want to lick my plate when I’m done eating. It is really an easy dish to prepare. To speed up the recipe you could always cook the onions in a separate pan and then add to the chicken pan once the your chicken is cooked. I personally found the sauce on this recipe to be way too sweet, although the underlying flavors with the balsamic and caramelized onions are delicious! I had to add quite a bit of both salt and pepper to the plated dish to cut the sweetness. Next time, I will omit the sugar entirely especially because the balsamic becomes sweeter as it reduces, and add salt & pepper to the sauce to taste to...

I made this tonight. I made it in a 9×13 dish to directions. I have two servings left. There were three of us. I ate mine with cilantro( highly recommend ) and sour cream. It was easy, tasty, not spicy( picky husband) and definitely cured my tamale craving with almost no work at all. I've made this recipe a few times. Followed recipe 1st time I made it & found it too sweet using the box corn bread mix. The next time I made my own dry self rising corn bread mix (found on the web) I added 1 tablespoon of sugar and 1 tablespoon of canola oil and followed the rest of the recipe instr. I also mixed the chicken with the enchilada sauce b4 putting it on the corn bread. In addition to the cheese, I also added black olives and chopped green onion. With my modifications, this is a great casserole. I followed this recipe but added a lot of sliced portabella mushrooms when the onions we’re almost done. Had to add a bit more beef stock as well since they soaked up all the juices. In addition I added 2 cloves of garlic to the onions. I also used 1/4 cup of red cooking wine to deglaze the skillet after cooking the chicken and added the mushrooms and onions to this.
